An easy, mouthwatering, Asian-inspired marinade for barbecued chicken. Perfect for sharing with your friends at a party. Make them smaller and enjoy them as a snack wrapped in lettuce with blue cheese dressing.

Ingredients

  • 6 skinless chicken thighs
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon minced garlic
  • 1 tablespoon black bean sauce, such as Wing Yip or Sharwood's
  • 1 teaspoon sesame oil
  • freshly ground black pepper to taste

Instructions

  1. Cut the thighs into smaller pieces if you want to put them on wooden skewers as I did. Place thighs in a bowl, and add ginger, garlic, black bean sauce, sesame oil, and ground black pepper. Stir well until completely coated.
  2. Marinate in the refrigerator for 2 hours.
  3. Put a few pieces on wooden skewers. If used for snack, 3-4 pieces will be enough.
  4. Barbecue chicken over medium heat until no longer pink but still juicy, about 20 minutes, turning only once.
