There is no reason why type 2 diabetic should not enjoy something sweet. This Chocolate Cheesecake is just one of many sweet desserts that can be done to suit our needs.

Cheesecake Base

  • 60g butter, melted
  • 2 tbsp. Stevia ( I use Xylitol)
  • 1 tbsp. unsweetened cocoa powder
  • 110g ground almonds

Cheesecake Topping

  • 50g cream cheese (soft cheese)
  • 2 tsp. Stevia ( I use Xylitol)
  • 140g full-fat Greek yogurt
  • 4 medium eggs, lightly beaten
  • 150g dark chocolate (minimum 85% cocoa solids), melted
  • 1 tbsp. unsweetened cocoa powder

    1. Preheat the oven to Gas Mark 5 or 190ºC.
    2. In a large mixing bowl, add the butter and Stevia, cocoa powder and ground almonds.
    3. Then firmly press into a loose-bottomed, 8 inch round cake tin.

Cheesecake Topping

  1. Mix the cream cheese and Stevia together in a bowl with a small whisk.
  2. Pour in the yogurt and mix thoroughly. Then add the eggs, one at a time, stirring after the addition of each egg.
  3. Break the chocolate into pieces and melt on a low heat in a medium-sized saucepan.
  4. Add the melted chocolate and a tablespoon of cocoa powder into the yogurt mixture.
  5. Spoon the cheesecake topping onto the chocolate crust.
  6. Smooth the top and pop in the preheated oven to bake for 35 minutes.
  7. Remove from oven and let it cool.

You can eat this cheesecake as it is, or douse it in single cream and top with raspberries.
