Just a simple courgette loaf bread-like cake, moist and delicious and delicately spiced with cinnamon. This recipe makes 1 loaf, perfect for enjoying slice or two now and freezing the rest.


  • 1 tbsp. butter
  • 100g whole grain soy flour
  • 50g ground almonds
  • 2 tsp. cinnamon
  • ½ tsp. ground nutmeg
  • Pinch of salt
  • ½ tsp. baking powder
  • 50ml olive oil
  • 2 large eggs, beaten
  • 1 small courgette, grated
  • 1 tsp. vanilla extract
  • 25g basil leaves, finely chopped


  1. Preheat oven to Gas Mark 4 or 180°C.
  2. Lightly grease an 8 x 4-inch loaf tin with the butter and line with greaseproof paper.
  3. In a large bowl, mix together the soy flour, ground almonds, cinnamon, ground nutmeg, salt, and baking powder.
  4. In a medium-sized bowl, whisk together the olive oil, eggs, grated courgette, vanilla extract, and basil leaves.
  5. Add the courgette mixture to the dry ingredients and stir until thoroughly combined.
  6. Then, pour this mixture into the prepared pan.
  7. Pop in the preheated oven and bake for 45 minutes until it becomes a golden brown.
  8. Then, place the loaf tin on a wire rack for 15 minutes to cool down.
  9. Tip out the loaf and remove the grease-proof paper.


Cut into 9 slices before serving this healthy and tasty low-carb snack!
