One either love them or hate them. Roasted Brussels Sprouts are one of my favorite sides since I started low carb way of eating. The Brussels sprouts should be brown with a bit of black on the outside when done.

Ingredients

  • 1 (500g) bag Brussels sprouts, ends trimmed and yellow leaves removed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 200 C / Gas mark 6.
  2. Place trimmed Brussels sprouts, olive oil, salt, and pepper in a large resealable plastic bag. Seal tightly, and shake to coat. Pour onto a baking tray, and place on center oven rack.
  3. Roast in the preheated oven for 30 to 45 minutes, shaking the pan every 5 to 7 minutes for even browning. Reduce heat when necessary to prevent burning. Brussels sprouts should be darkest brown when done. Serve immediately.

Notes

I do sometimes experiment with spices and herbs and found that garlic and thyme or oregano works really well with Brussels sprouts.
